…Oops. The whole of June has come and gone and somehow I didn’t manage to post a single substack. Honestly, this month has been a complete whirlwind of making it through the week before spending the weekend outdoors in my campervan. There’s something quite frantic about the summer in Scotland as you know you have to make the most of the daylight before winter rolls back around. Still, it’s been fun, and I did eat a few delicious things along the way:
Smashed sesame potato salad

This is a very yummy twist on a potato salad using tahini, miso and sesame seeds. It would be an extremely good addition to a barbeque, but I served it on a weeknight with some crispy tofu.

A tangy pasta salad with capers, olives and a dijon-mustard dressing. I’d never thought to use a more traditional salad dressing for a pasta salad before, but really liked it. I didn’t add any eggs as in the recipe, and made this once with tuna and once with cannellini beans, so it can be made vegan too.
Tofu pad thai
I think I have finally nailed a good pad thai sauce so will be writing up this recipe soon! A weeknight staple with oven-crisped tofu, and lots of veggies with rice noodles.
Flapjacks

One thing that gets made in my house pretty constantly are flapjacks, as they’re the perfect mid-afternoon snack when working or on-the-go option for days outdoors. I don’t think this is the healthiest recipe you could possibly use, but it’s fuss-free, there’s no baking, and it saves us a fortune on processed cereal bars. We don’t bother with any of the fancy chocolate work in the blog, and use chopped dates instead of cherries and a bag of mixed seeds that are cheap to pick up in Lidl!
